Calamari with farfalle

Follow package instructions to thaw the calamari, rinse and drain in a colander.

In boiling water add the salt and then the farfalle. Cook for about 8 minutes (al dente) and drain.

Sauté the leeks and peppers in a deep pan until wilted (about 7 minutes). Add the calamari, balsamic vinegar and stock. Let simmer for about 5 minutes. Add the mustard and farfalle and combine well. Cook for another 2 minutes, garnish with the parsley and remove from heat.

Finally, add the parmesan, mix everything well and serve.
: If you want to prepare the farfalle in advance, you should freeze them immediately and then strain them. In this way you stop the cooking process as they boil again in the pot.
